  • 2 cupspumpkin (kaddu)
  • 1 tablespoonolive oil
  • 1/2 teaspooncumin
  • 1/8 tspasafoetida (heeng)
  • 1 tspfenugreek seeds (methi dana)
  • 1 tspfennel seeds (saunf)
  • 1 Tbsptiny cut ginger
  • 3-4whole red or green chillies
  • As per taste Salt
  • 1/2 tspturmeric (haldi)
  • 1 tspred chilli powder
  • 1 Tbspcoriander (dhania) powder
  • 1 tspgaram masala
  • 1 tspRai dana (optional)
  • 1 tspKasuri Methi leaves dried
  • 5/6curry patta (optional)
  • As required Stevia / erythritol sweetener according to taste
  • 1 tspdried mango powder
  • 1 Tbspchopped coriander (dhania) leaves

    Rinse, peel and chop the pumpkin.

    Heat the oil in a kadhai and add the asafoetida, curry leaves, rai dana, fenugreek, fennel, and cumin seeds. When they begin to splutter, add the ginger, chilies, and lastly dried methi leaves.

    Sauté till lightly coloured and add the pumpkin.

    Stir-fry on high heat till it looks glossy.

    Add salt, turmeric, garam masala, coriander powder, chili powder,mango powder, and sweetener. Mix well.

    Reduce heat, cover, and simmer till cooked through. Stir 3-4 times.

    Add dhania leaves and stir fry without lid.
