Ingredients

8 large brownies
  1. Dry Ingredients:
  2. 1/4 cupflour
  3. 1/4 cupoat bran
  4. 6 tablespoonscocoa powder
  5. 2 tablespoonsbrown sugar
  6. 1 teaspoonbaking powder
  7. 1/4 teaspoonsalt
  8. Wet Ingredients:
  9. 1 1/2 cupokra (frozen)
  10. 3eggs
  11. 5 tablespoonscoconut oil
  12. 1/2 cupwarm water
  13. Other:
  14. 1/2 cupchocolate chips

Cooking Instructions

    Preheat the oven to 180’C.

    Spray two small oven bowls with cooking spray. Or alternatively one large oven bowl.

    Mix the dry ingredients in a large bowl. Sift the flour and cocoa powder while adding.

    Whisk the eggs in a medium bowl.

  5. 5

    Whisk the coconut oil and water in a cup until the coconut oil is dissolved.

  6. 6

    Blend the frozen okra in a blender (I used a smoothie maker) until finely diced.

  7. 7

    Note: the okra has been blanched and frozen, helps to reduced the slime of the okra.

    Whisk the coconut oil, water and okra into the eggs until smooth.

    Add the wet ingredients with the dry ingredients, mix well.

    Add the chocolate chips and combine well.

  11. 11

    Scoop into the bowls and bake for 22 minutes. It will still be very soft in the inside.

    Let cool completely, cover and refrigerate overnight.

  13. 13

    Enjoy with a cup of coffee or delicious with a scoop of ice cream.
