Ingredients

1/2 hr
5 to 6 servings
  1. 2 cupsRice flour
    Karnataka Special Akki Rotti
  2. 1 cupRoasted gram flour 1 cup
    Microwave Dhokla/ No Fire Dhokla
  3. 2 cupsVegetable Oil to fry
  4. as per tasteSalt, chilli powder, turmeric powder
  5. 1 tspCumin powder, coriander powder as per taste (1 tsp each)
  6. 1.5 tspSesame seeds
  7. 1/2 tspCarrom seeds
  8. 1/4 cupMelted hot butter
  9. as requiredWater to bind the dough

Steps

    First, sieve both the flours in a large bowl. Then add the spices, seeds and salt.

    Then pour hot melted butter or oil and start rubbing it on the flour. Taste it and adjus the salt and spices. Then bind to a semi soft dough by adding water in very small batches.

    Then cover the dough with a damp towel and keep for 10 minutes to set. Now keep the oil to heat in a kadhai on medium heat.

    Grease the chakli press dough tube with oil all over. Place the star shape holed disc at base. Then take a ball sized dough, shape into a long roll and press inside the tube. Check the temperature of oil by dropping a small ball of dough in. If it floats slowly on top, the oil is ready.

    If oil is not properly hot, the dough may sink, in that case, let the oil heat up. If it's too hot, it will come immediately on top. In that case, switch off the heat for a minute and recheck by doing the dough ball taste.

    Keep some greased squares of polythene sheets on counter. Press round shaped chaklis on each sheet. Then invert it on a greased perforated spoon and slide in oil.

    Let them fry for a minute. Then splash oil from sides and when base gets golden, flip it over. Fry from other side on medium heat.

  8. 8

    Remove and drain on kitchen towel. Cover with tissue paper so that they don't catch moisture. For next batch, heat oil on medium heat and then fry next batch.

    Prepare all the chaklis similarly. Then offer this to god and then serve to your family. Enjoy. Happy Diwali.
