4 1/4 cupswater (1 liter)
1sweet potato
1cinnamon stick
1 1/2whole piloncillo cones (or 1 1/2 cups packed dark brown sugar, about 300 grams)

Pour the water into a large pot and add the cinnamon stick. Bring to a boil for a few minutes.

Cut the sweet potato into pieces as desired.

Add the cut sweet potato to the pot and let it boil. Once boiling, add the piloncillo (or brown sugar).

Simmer for 1 hour (cooking time may vary depending on your stove).
