Sopes are a wonderful option for breakfast, lunch, or dinner when you want something delicious and truly Mexican. This is my version—hope you enjoy it!

Start by heating the sopes on a skillet or griddle with a little oil. If you have masa, mix it with water and salt, shape into thick tortillas to form sopes, and cook them on the griddle. Once cooked, pinch the edges all around to form a border.

Heat the refried beans. I like to cook them with a little chopped garlic and onion. Spread a generous amount of beans on each sope.

Add warm shredded chicken. Sprinkle with Cotija cheese and salsa to taste. You can also add sour cream and shredded lettuce if you like. And that's it!
