Ingredients

30 minutes
2 people
  1. 500 gturkey mince (i used breast but thigh would work too)
  2. 200 gtenderstem broccoli (cut in half and sliced down the middle if stems are really thick)
  3. 2 clovesgarlic finely chopped
  4. 1 knobginger finely choppee
  5. 1red chilli finely chopped
  6. 1-2carrots (depending on size) grated
  7. 3large handfuls of kale
  8. Juice of one lime
  9. 15 gfresh coriander finely chopped
  10. 4 tbspsweet chilli sauce
  11. 2 tbspsoy sauce
  12. Sesame seeds
  13. Oil for frying
  14. Rice to serve

Steps

30 minutes
  1. 1

    Heat a splash of oil in a large pan or wok over a medium/high heat. Add the turkey mince and cook for 4-5 minutes until beginning to brown.

    Add the tenderstem broccoli to the pan/wok and cook for 2 minutes, the add the grated carrot and kale and cook for another 2 mins.

  3. 3

    Stir in the garlic, fresh ginger and red chilli, then cook for a minute more. Add the sweet chilli sauce and soy sauce, then fry for 4 minutes more until the mince is cooked and the broccoli is cooked but still crunchy.

    Scatter with sesame seeds, sliced spring onions and fresh coriander and stir in the lime juice. Serve with rice.
