This recipe has become a mid-week staple for me and my family because it’s super quick to make, very healthy and it tastes great too. I found it on Delicious.com so can take very little credit for it but i want to keep it in my

Heat a splash of oil in a large pan or wok over a medium/high heat. Add the turkey mince and cook for 4-5 minutes until beginning to brown.

Add the tenderstem broccoli to the pan/wok and cook for 2 minutes, the add the grated carrot and kale and cook for another 2 mins.

Stir in the garlic, fresh ginger and red chilli, then cook for a minute more. Add the sweet chilli sauce and soy sauce, then fry for 4 minutes more until the mince is cooked and the broccoli is cooked but still crunchy.

Scatter with sesame seeds, sliced spring onions and fresh coriander and stir in the lime juice. Serve with rice.
