One of the traditional vegan unique tastes of Turkish cuisine.. Kısır, also known as bulgur salad, is a cold dish in Turkish cuisine for some, and an appetizer for others. Similar to Tabule salad in Arabic cuisine or Mediterranean couscous salad, but kısır contains many vegetables such as onion (dry and/or green), tomato paste, tomato, parsley, cucumber, lettuce etc. Thin bulgur for tiny/meatballs is used instead of bulgur for rice. Kısır is especially eaten with tea in Turkish culture. And today I will share with you one of my favorite flavors that I can eat until I die 😋

Put the bulgur in a deep bowl and add enough hot water to cover it by 1 finger. Close the lid and wait for 10-15 minutes to absorb all the water.

Cut the onions, green onions and garlic into small cubes and cook in 3 tablespoons of olive oil.

Add 6 tablespoons olive oil and tomato paste to the bulgur, which has absorbed the water, and mix it with your hand or with a spoon. The color of the bulgur should completely change and it should be the color of tomato paste.

Then add the cucumber cut into small cubes and finely chopped lettuce, parsley and dill, and cooked onions. And mix it.

Then add the juice of 1 lemon, pomegranate sauce and all the spices and mix.
