First give vertical slits to the eggplant. Apply oil all over the eggplant. Grill it directly on high flame.

Cool it down. Remove the skin. Smash eggplant.

Heat pan. Add oil. When oil is heated, add mustard seeds. Let them spluttered. Add cumin seeds, curry leaves, asaefoitida. Saute for a minute. Add onion.

Cook onion till it turn to golden pink. Add turmeric powder, red chili powder and kala masala. Saute for 2 minutes.

Add smashed eggplant and peanut powder. Add salt and mix it. Cover lid. Cook for 3 to 4 minutes. Don't cook so much because we grilled eggplant already.

Garnish with coriander. Serve with jowar bhakri and salad. Enjoy the taste 😋
