Ingredients

  1. 500 gmRadishes (mooli) with leaves chopped
  2. 2eggplant (baingan) cubes
  3. 2 tablespoonsOil
  4. 1 teaspoonFenugreek seeds
  5. 1 teaspoonCumin seeds
  6. 1 pinchAsafoetida
  7. 10 clovesGarlic, chopped
  8. 2Green chillies chopped
  9. 1onion chopped
  10. as requiredSalt to taste
  11. 1/4 teaspoonTurmeric powder
  12. 1 tbspRed chilli powder
  13. 1 tspCoriander powder

    Rince the radish leaves a couple of time in a bucket/ bowl of running water. Once washed well and all the dirt and mud has been removed, drain the excess water and finely chop the leaves.

    Heat oil in a pan, add Methi and cumin seeds and saute till the seeds splutter.
    Add asafoetida, green chillies, Chopped garlic. Add chopped onions and to saute.

    Now Add eggplant and mix well.
    Now add radish leaves with chopped radish mix well and saute on high heat for 1-2 minutes.
    Add radishes, mix well and saute for 2-3 minutes.

    Add salt, turmeric powder, coriander powder and red chilli powder and mix well.

    Cover and cook on low heat for 5 to 10 minutes or till the radishes are cooked completely.

    Transfer into a serving bowl and serve hot with paratha, Roti or Rice.
