Just like the season, the special winter produce is also short-lived, and foodies like us try to savour all the winter foods while they last. Mooli (radish) is one such that is not to be missed out on. Rich in vitamins and iron, mooli, with its pungent flavour, tastes very good when turned into a dish.

Rince the radish leaves a couple of time in a bucket/ bowl of running water. Once washed well and all the dirt and mud has been removed, drain the excess water and finely chop the leaves.

Heat oil in a pan, add Methi and cumin seeds and saute till the seeds splutter.
Add asafoetida, green chillies, Chopped garlic. Add chopped onions and to saute. - 3
Now Add eggplant and mix well.
Now add radish leaves with chopped radish mix well and saute on high heat for 1-2 minutes.
Add radishes, mix well and saute for 2-3 minutes. - 4
Add salt, turmeric powder, coriander powder and red chilli powder and mix well.
Cover and cook on low heat for 5 to 10 minutes or till the radishes are cooked completely.

Transfer into a serving bowl and serve hot with paratha, Roti or Rice.
