I had 10 minutes and needed a fast breakfast - If you have 10 minutes to spare you too can be eating this quick and easy delicious breakfast😀

Pop your bread into a toaster.

As the toast is being made, crack two eggs into a hot frying pan with a little oil. Fry to your preference. I always love a crispy underside and a runny yoke (best of both worlds) So I get my pan very hot before I add the egg so it crisps almost immediately.

Remove toast from the toaster and then top with your eggs. Season to taste. Set aside.

In the same hot pan that the eggs were removed from, add in the anchovy and warn through the oil. Then add your tomatoes and slice mushrooms straight into the pan. Fry on a high heat till mushrooms and soft and cooked.

Add to the eggs and enjoy :)
