Vegetable Pulao

Assemble ingredients, chop all veggies, and cut paneer into cubes.

Soak rice for 30 - 40 minutes and keep aside.

Whole spices, marinade paneer cubes with little salt + turmeric, Marinade for 10 minutes and fry till golden brown and keep aside.

In a moderately heated pan, add ghee, add cumin seeds + bay leaf + cardamom + cloves + cinnamon and allow to crackle and spices turn aromatic. Add onion and sauté till pinkish. Add ginger + garlic and sauté for a few seconds.

Add veggies except for green peas + capsicum and stir fry by adding slight salt, sauté for 4-5 minutes.

Add Capsicum cubes and sauté for 2 minutes. Now add all spices and sauté for 3-4 minute by adding 3 tbsp water.

Sauté for 3-4 minutes.

Add green peas and mix gently. Now add soaked rice and gently mix.

Fry rice for 2 minutes.

Now add 4 cups warm water, mix very nicely and cook under medium flame by covering for 7-8 minutes.

Now check rice and water, rice is semi-soft, so add 1/2 - 1 cup warm water + sugar and cook rice by covering under low flame for 10 - 12 minutes or till rice softens. Chopped coriander can be added at this stage and check for salt also. Add fried paneer cubes also.

Switch off the flame and keep in stand-by mode for 2-3 minutes, Pulao is ready.

Serve with Tomato Coconut Chutney or Raita.
