This is a recipe my dad taught me, but I still can't make it as delicious as he does 🤣 It's amazing with hot rice 😋
Steps
- 1
Clean the basa fish and pat dry. Finely chop the white parts of the green onions and chili peppers (if you like it spicy).
- 2
In a separate bowl, mix the seasoning powder, fish sauce, ground pepper, salt, and hot water.
- 3
Add oil to a pan and heat over medium. Add sugar without stirring or adding water, just tilt the pan to dissolve the sugar evenly.
- 4
When the sugar turns a dark brown, add the fish and fry both sides until firm but not crispy. Pour the sauce mixture in and cover with a lid that has a steam vent.
- 5
Turn the fish to coat both sides evenly with the sauce. Cook for about 20 minutes. If there's not enough liquid and the fish isn't fully coated, add more water. When the sauce thickens, add the green onions and chili peppers, cover, and turn off the heat.
- 6
Serve with hot rice 🥵
