Ingredients

30 minutes
4-5 people
  1. Marinade (marinate for at least one hour)
  2. 1 kilogramchicken
  3. 1 tablespoonsalt
  4. 1 tablespoonturmeric powder
  5. Seasoning
  6. 40 gtamarind (add some water to extract juice)
  7. 8 tablespoonstomato paste
  8. 100 gpalm sugar
  9. 2 tablespoonsoyster sauce
  10. Salt to taste
  11. 300 milliliterswater
  12. Aromatic spices (blend and refrigerate for 3-4 hours)
  13. 20 gdried chili peppers (soak in hot water for 10 minutes and drain)
  14. 2-3onions (cut into small pieces) or red onions
  15. 10shallots
  16. 12 clovesgarlic
  17. 4 stalkslemongrass (cut into small pieces)
  18. 1small piece galangal (cut into small pieces)
  19. 1small piece ginger (cut into small pieces)
  20. as neededOil
  21. For sautéing
  22. Curry leaves as needed
  23. 1pandan leaf
  24. 2onions (sliced into rings)

Steps

  1. 1

    Deep fry the marinated chicken until it is about 60-70% cooked.

    In a pan, add a little oil and sauté one sliced onion, curry leaves, and pandan leaf together until fragrant.

  3. 3

    Add the aromatic spice paste and stir-fry over medium-low heat until fragrant. Add tamarind juice, tomato paste, palm sugar, a little water, and oyster sauce, and stir-fry.

  4. 4

    Mix the chicken and onion rings into the sauce, cover and simmer for 5-10 minutes until the chicken is fully cooked.
