A 'Maharashtrian 'cuisine which is healthy and delicious, a nutty' laddu' prepared with roasted white sesame seeds, jaggery, roasted peanuts and dessicated coconut, it is a vegan recipe. Ingredients

4-5 people
  • 1/3 cupdry roasted white sesame seeds
  • 1/4 cuproasted peanuts
  • 1/2 cupdessicated coconut 🥥
  • 1/2 cupgrated jaggery
  • 3 tbspwater 💦
  • 1 tspcardamom powder
  • 1/4 tspvanilla extract (optional)
  • 2 tbspfinely sliced almonds
  • Oil for greasing your hands

    Heat a nonstick pan and add white sesame seeds, dry roast them on low flame, stir sesame seeds in-between, cook for 2 mins.(Do not brown sesame seeds), remove and keep aside. In same pan dry roast the peanuts on low heat, stirring often, until peanuts becomes crunchy and get a few black spots on them. Remove and keep aside, let it cool for a while, when still warm, remove skin from peanuts and keep aside.

    Again in same pan add dessicated coconut 🥥and stir continuously, roast dessicated coconut 🥥 until light golden, (don't burn it). Removed dessicated coconut 🥥 and keep aside, take nut grinder and grind peanuts and keep aside.

    In a bowl 🥣 combine crushed peanuts, roasted sesame seeds & dessicated coconut 🥥, cardamom powder, finely sliced almonds, mix well and set aside.

    In a sauce pan, add grated jaggery and water, cook on low flame, stirring the jaggery to dissolve in the water 💦, cook until it's comes to soft ball stage. To check the soft ball stage, take a small bowl 🥣 and add water 💦, drop a bit of jaggery syrup in the water, when it's cool down and when you remove it, the consistency will be sticky and forming a soft ball. It's done

    Put jaggery syrup in dry ingredients (in method 3) and mix well, add vanilla extract,let it cool for a while, when still warm to touch and add some oil in your hands and make laddu and serve.
