Orange Coconut Delight

Winter is the phase when fruit market is flooded with sweet and juicy oranges and we find ways to consume this lovely fruit.
Orange Coconut Delight is a beautiful winter dessert where Orange and Coconut is punched together along with thickened milk to form a lovely dessert
Different sweets / dessert is prepared and served on Sankranti and this lovely dessert can be served with great charm.

Assemble all ingredients

Take fresh oranges, very gently remove the thin white skin of each orange segments and discard the seeds. Only pulp and juice is required.

In pan / kadhai, add the orange pulp + juice + sugar and cook under medium flame.

Initially bubbles will start and gradually juice will dry up. Don’t dry too much.

Mixture will turn glossy and will thicken, immediately transfer to a bowl. Keep aside.

In pan / kadhai, add milk and reduce to 3 cup. Take out 1 cup milk and keep aside. Allow the milk in pan / kadhai to cool down little bit.
Now we have 2 cup milk in pan / kadhai and in this add 4 tbsp milk powder and mix well. - 7
Switch on flame and cook for few more minutes to reduce to half of quantity. Gradually milk thickens.

Add coconut into it and cook under low flame for 5-6 minutes. Add the 1 cup thickened milk, Let coconut absorb milk. Mixture thickens.

Add cardamom powder and stir well.

Now add the orange mixture and mix very nicely. Switch off flame and Lastly add orange zest into it.

Add coconut pieces and mix gently. If mixture seems to be very thick, then 3-4 tbsp milk can be added.

Dessert is done.

Garnish with Pomegranate seeds or any preferred dry fruits.

Serve at room temperature and enjoy winters.
