Ingredients

45-50 minutes including prep
4-6 servings
  • 1 tspvegetable oil
  • 2onions, roughly chopped
  • 3 clovesgarlic, roughly chopped
  • 2 stickscelery, roughly chopped
  • 250-300 gcooked chicken, in small chunks
  • 2-3carrots roughly chopped
  • 2-3florets broccoli, in small pieces
  • 2potatoes, roughly chopped
  • 1 tinbaked beans
  • 1-1 1/4 lchicken stock (I used homemade but stock pots work)
  • Jellified juices from roasted chicken, if available
  • 1 tspsalt
  • 1 tspGround black pepper
  • 1 tspdried thyme
  • 1 tspdried rosemary
  • 1 handfuldried macaroni

Steps

45-50 minutes including prep

    Bring the oil to a medium- high heat and gently fry the onions, garlic and celery until softened, stirring only to avoid sticking.

    In the meantime, put all the other ingredients except the macaroni into a stockpot or large saucepan, stir well and start heating.

  3. 3

    Stir in the softened onions, garlic and celery, cover the pan and bring to a boil, stirring a couple of times. Reduce the heat to a fast simmer, stirring occasionally but thoroughly. After 25 minutes stir in the macaroni, increase the heat and cook for a further 5-6 minutes, stirring occasionally.

    Taste and add further seasoning if wished. Serve piping hot with your choice of bread.
