Separate the thin skin from the ribs. It is not difficult and very important.

Prepare vegetables, onion, head of garlic, carrots, cut into large pieces

Wrap a baking sheet with foil.And put the ribs, and rosemary (I have dry rosemary), vegetables, peppercorns, a little soy sauce and two glasses of water.

Wrap it well with foil, in two layers, so that the water does not evaporate. We send it to the oven for at least 1 hour 20 minutes, if the ribs are thick and large, then increase the time and add a little more water. 180 degrees

While the ribs are cooking, prepare the sauce. In a small saucepan, put on a small fire, add tomato ketchup 4 tablespoons, barbecue sauce 4 tablespoons, 3 tablespoons Balsamic Vinegar (Glaze), 4 tablespoons of soy sauce, 1-2 tablespoons of smoked paprika. Mix it all and bring to a boil, stirring regularly, set aside so that everything mixes well.

When the ribs are ready, increase the temperature to 250 degrees. Remove the foil and brush well on both sides with the freshly prepared sauce. and set for 10 minutes.

You can serve it with mashed potatoes (see my posts for a recipe for creamy mashed potatoes) or any other grilled vegetables, a great dish for beer and wine. Enjoy the taste, bon appetit😊
