Aloo Capsicum Dry Sabji (Aloo Shimla Mirch) is an Indian stir fry made using potatoes and green bell peppers. Serve it for lunch or dinner with dal and roti. It is a vegan sabji that gets ready in under 30 minutes, making it perfect for quick weekday meals. First of all cut onion, capsicum and potato into dices.

Then heat oil in a pan, add cumin seeds, add turmeric powder and asafoetida and saute.

Now add potato pieces and salt to this, mix well, cover the lid and cook on slow gas flame till the potatoes become soft, stirring the potatoes in between. Now add diced capsicum, diced onion and salt to this, mix well, cover the lid and cook on medium gas flame for 2 to 3 minutes.

Now heat oil in another pan, add asafoetida and peanut powder and roast for 1 minute. After that add gram flour and mix well and roast for 1 minute.

Now add coriander cumin powder, red chilli powder, turmeric powder, sugar and salt according to taste and mix well and roast all the spices for 2 minutes. Now add cooked aloo, capsicum and onion pieces to this, mix well and cook on medium gas flame for 2 minutes.

Now turn off the flame and add chopped green coriander leaves to this vegetable and mix well.

Now our delicious Aloo Capsicum Dry Subji is ready to serve. Garnish this vegetable with green coriander leaves and serve hot with dal rice or roti.
