Mash and season the potatoes while they're still warm, then chill them even for a little while for the best flavor.

This is a recreation of a salad from a certain famous restaurant.

Microwave or boil the potatoes.

Mix the mayonnaise, vinegar and sugar together.

Mix the tarako into the mixture from Step 2.

Mash the potatoes while they are still hot.

Add the combined sauce from Step 3 to the still warm mashed potatoes. Taste, and adjust the seasoning.

Add the finely chopped green onion and chill in the refrigerator.
