Ingredients

10 tacos
  • Tacos
  • 10corn tortillas
  • 4 stickssurimi, chopped
  • 1/2carrot, shredded
  • 1/2onion
  • 1 clovegarlic
  • Salt and pepper, to taste
  • Chopped lettuce, for serving
  • Sauce
  • 1/4 cupmayonnaise (about 60 ml)
  • 2 teaspoonscanned chipotle peppers in adobo sauce
  • 2 tablespoonssour cream (about 30 ml)
  • 2 tablespoonswater (about 30 ml)
  • Juice of 1 lime

Steps

20 minutes
  1. 1

    Blend the sauce ingredients—mayonnaise, chipotle peppers, sour cream, water, and lime juice—until smooth. Set aside.

  2. 2

    In a skillet, heat a little oil and cook the onion, garlic, and carrot until the onion turns translucent. Add the surimi and cook for about 3 more minutes. Set aside.

  3. 3

    Fill the tortillas with the surimi mixture. Fry the tacos in a skillet over medium heat with enough oil until crispy.

  4. 4

    Serve with chopped lettuce and the chipotle sauce.
