Blend the sauce ingredients—mayonnaise, chipotle peppers, sour cream, water, and lime juice—until smooth. Set aside.

In a skillet, heat a little oil and cook the onion, garlic, and carrot until the onion turns translucent. Add the surimi and cook for about 3 more minutes. Set aside.

Fill the tortillas with the surimi mixture. Fry the tacos in a skillet over medium heat with enough oil until crispy.

Serve with chopped lettuce and the chipotle sauce.
