Steps

In a large skillet or pot (big enough to cook the rice) sauté the onions in butter and oil until softened.

Add all the spices and cook a couple minutes, while stirring.

Add the rice and sautéed in the oil until nutty and fragrant, while stirring. This will take several minutes.

Add the water and stir a few times while it comes to a boil.

Once boiling, reduce heat to low, cover the pot and leave for 15-20 minutes or until water is completely evaporated. I like to let it go until the bottom browns a bit as well. (NOTE: I always use a good nonstick pan for rice!)

Turn off the heat and let the rice sit for another 10 minutes or more until it completely dries out. Then fluff the rice and serve.
