Sunshine Tomato Noodles for Ramen or Tsukemen

This is a new version of my very popular "Sunshine Somen Noodle". I added a really simple version of the tomato soup too. Served chilled, this ramen is perfect in the summer. The soup also goes well with pasta, udon noodles, or rice.
The soup is diluted, so it's somewhat strong. Adjust the added seasoning to taste.
You can add anything to this, such as ingredients typically included to minestrone or tomato sauce pasta. For instance, you can add seasonal raw or sautéed vegetables, chicken tenders, ham, bacon, sea food, soft set egg, etc. The soup is also as delicious as rice porridge! For 2 servings. Cooking Instructions

Put all the tomato soup ingredients (except for the ☆) and 250 ml of water in a pan and bring to a boil. (Skim off scum). Add the ☆ ingredients to season the soup.

Cook the noodles of your choice. Cut the cherry tomatoes in half.

Warm the ramen bowls. Add the cooked and drained noodles and soup, add the ☆ ingredients and it's done. You can also serve the noodles and soup separately as tsukemen (dipped noodles; eat the noodles by dipping in the soup.)
