This is my go-to recipe when I want to make something special in as short amount of time.

Before adding the shimeji, it's best if the flavor is slightly strong.

Ingredients

2 servings
  1. 2☆ Chicken thighs
  2. 1☆ Salt & pepper
  3. 1 1/2 tbspOlive oil
  4. 2 cloveGarlic
  5. 300 mlTomato sauce
  6. 2☆ Bay leaves
  7. 1☆ Soup stock granulated cubes
  8. 1 bunch☆ Shimeji mushrooms
  9. 1☆ Italian parsley or parsely

Cooking Instructions

  1. 1

Cut the thighs in half, and sprinkle both sides with salt and pepper.

  2. 2

Heat olive oil in a pot and cook the minced onions. Brown both sides of the thigh meat. Once the skin is lightly browned, flip over the meat and cook the other side.

  3. 3

Add the tomato sauce, bay leaves, and soup stock and simmer over low-medium heat for 15 minutes.

  4. 4

Season with salt and herbs to taste. If it's too bitter, add some sugar. I recommend a rich flavor.

  5. 5

Add the shimeji mushrooms and once tender, transfer to a serving plate. Top with parsley and heavy cream as desired, and it's complete.

  6. 6

I prepared the chicken as karaage and added paprika.

  7. 7

By adding some stock vegetables and soup stock, I was able to transform it into a tomato curry.
