Soak the watercress in lightly salted water and rinse well.

Bring a pot of water to a boil with 1 teaspoon coarse salt (5 grams). Add the watercress and cook for 2 minutes, then immediately remove from heat.

Rinse the watercress under cold water and squeeze out excess water.

Grate the garlic and mix it with salt, sesame oil, and toasted sesame seeds.

Add the squeezed watercress and mix well by hand. Adjust salt to taste and let sit for 10 minutes to absorb the sesame flavor.

Transfer to a plate, sprinkle with extra toasted sesame seeds for garnish, and serve alongside other dishes.
