Ra-yu Spicy Chili Sesame Oil with Lots of Garlic

My family loves storebought chunky ra-yu so it disappeared in no time whenever we bought it. We made this to save money.

If it looks like things are going to burn at Step 4, quickly put the frying pan on a wadded up, tightly wrung out moist kitchen towel to cool it. This ra-yu is not that spicy, so if you want it spicier add some ichimi spice. I edited the recipe a little. For 350 ml. Recipe by zakkiiM

Ingredients

  • 2Onions
  • 6 cloveGarlic
  • 2 tbspSmall red chili peppers (sliced into rounds)
  • 1/3 tsp★ Salt
  • 1/2 tsp★ Sugar
  • 1 tbsp★ Vinegar
  • 1 dash★ Soy sauce
  • 1 dash★ Chicken soup stock granules
  • 1 dash★ Umami seasoning
  • 150 gramsVegetable oil
  • 150 gramsSesame oil (or vegetable oil)

Steps

  1. 1

    Cut the onions into quarters, and slice thinly. Put in a heatproof container, and microwave without a cover for 10 minutes to evaporate the moisture.

    Slice the garlic thinly, and microwave for 1 1/2 minutes at 1000 W uncovered to evaporate the moisture.

    Stir fry the onions in plenty of vegetable oil until golden brown. Put the garlic and red chili peppers in another frying with oil, and put the heat on to low.

    Stir-fry until the garlic is light brown. Add the golden brown onion and the ★ ingredients, and fry until the garlic and onion are crispy.
