This is a delicious dry curry with a colorful look. The combination are ladies finger, onion and pumpkin without spices. It has a somewhat different taste and.

Cut ladies finger, onion and pumpkin into slices.

In a kadhai, add oil and switch on the burner. When the oil becomes hot, add mustard, fenugreek and fennel seeds and allow them to flutter. Add onion slices and saute for 2mins in low flame. Next add pumpkin slices and mix well. Cover with lid and cook till the pumpkin slices become soft. Add ladies finger slices and cook for some more time.

Add salt and switch off the burner. Cover the kadhai with lid and keep it undisturbed for 2-3 minutes. Add amchur powder. Transfer the fried curry into a serving plate or bowl. One can add chat masala powder instead of amchur as well.
