First of all Bloom the yeast in lukewarm water to make sure it is still good. In a deep plate add the water and a teaspoon of sugar and yeast. Mix and cover it and let it sit for 8-10 mins. It would rise and bubble.

Sift the flour and add the sugar and set aside. Break the eggs in a plate and whisk it, then add it into the yeast mixture and whisk until combined.

Add the yeast and egg mixture into the flour mixture and work it until it forms a rough dough.

At this point, open the dough and add the butter, close it and work the butter to combine them. At this point, you would notice the dough almost separating, no worries, it would come together in less than 5 mins.

When you are done, the dough would be a little soft but still rough, you need to knead it for at least 30 mins by hands until it is very soft, very smooth and very stretchy. You have options here, you can pound it in a mortar if you don't have a mixer. A mixer would take only 10-15 mins.

When the dough is ready, weigh it and divide it, if you don't have a scale just roll it to form a log and cut it into 13 pieces.

You need to work fast here as the dough would have started rising. Roll them into balls, and let them sit on a piece of nylon/parchment paper individually.

Let it rise until it has tripled in size, it should take about 1hr:30 mins hours or more They must not deflate, they must be able to hold their shape.

Then deep fry on low heat, to avoid burning, they burn easily. Here's the trick, fry for 3 mins on each side then, until light golden brown, then, remove it. Avoid turning it consistently you won't get any white line if you do that.
