During the summer, my love for one-dish meals is satisfied with rice salads. Prepared in advance and taken out of the fridge at mealtime, they are a great time-saving solution.

During the summer, my love for one-dish meals is satisfied with rice salads. Prepared in advance and taken out of the fridge at mealtime, they are a great time-saving solution.

Boil the rice in plenty of salted water. Once cooked, drain and set aside.

Cut the bell peppers into chunks, removing the strings and seeds. Cook them in a pan with olive oil and the olives.

Cut the chicken breast into pieces and add it to the peppers. Season with salt and finish cooking without covering the pan.

In a bowl, combine the rice with the chicken and peppers. Let everything cool, dress with olive oil, and keep in the fridge until ready to serve.
