This is a rather simple dip that's a common staple in Levantine and Arab cuisine. It turns out to be easy enough to make.

Mix the tahini, lemon juice, garlic, olive oil, cumin, and chickpeas (drain canned chickpeas first), in a food processor and process for a minute.

The hummus will probably be too thick at this point, so add a little water a tablespoon at a time and pulse the processor until it reaches the desired consistency. Add salt to taste.

Serve with a drizzle of olive oil topped with a dash of paprika or sumac, and warm pita bread.
