  • Ingredients to season the chicken
  • 3boneless, skinless chicken thighs
  • 1 clovegarlic, minced
  • 1 teaspoonsoy sauce
  • 1 tablespoonoyster sauce
  • 1 1/2 teaspoonssesame oil
  • 1 teaspoonvegetable oil
  • Vegetables and seeds
  • 2 1/2 cupsNapa cabbage, thinly sliced (about 200 grams)
  • 2 cupsregular cabbage, very finely shredded (about 150 grams)
  • 1/4 cupgrated carrot (about 30 grams)
  • 1 cupbroccoli florets, cut into small pieces (about 90 grams)
  • 1/2 cupcooked edamame (soybeans) (about 75 grams)
  • 2 tablespoonschopped cilantro
  • 1/3 cupunsalted roasted peanuts (about 45 grams)
  • 1 1/2 teaspoonstoasted sesame seeds
  • Dressing
  • 2 tablespoonsvegetable oil
  • 1 teaspoonsesame oil
  • 1/4 cuprice vinegar (60 ml)
  • 2 tablespoonshoney
  • 2 tablespoonshoisin sauce
  • 2 tablespoonssoy sauce
  • 1 teaspoonfinely minced ginger

    In a bowl, mix together the ingredients for seasoning the chicken. Season the chicken with the mixture and let it marinate while you prepare the rest of the ingredients.

    In a small bowl, whisk together the dressing ingredients.

    Heat a grill pan or griddle and lightly brush with oil. Sear the chicken thighs on both sides until cooked through. Let cool, then slice into thin pieces.

    In another bowl, combine both types of cabbage, carrot, half of the broccoli, half of the edamame, cilantro, and half of the dressing.

    Divide the salad among plates. Top with the sliced chicken and the remaining vegetables. Add the peanuts and sesame seeds.

    Drizzle the remaining dressing over the top to taste and serve.
