You can make these oat pancakes plain, sweet, or savory, and use any fruit you like!

Blend the oats in a blender until you get a finer texture. If you don't have a blender, you can use an immersion blender. Be patient, and occasionally stir the oats until they reach a flour-like consistency.

Add the egg, milk, salt or sugar, and, if you like, vanilla. Once the mixture is smooth, add the chopped fruit.

Add baking powder (1 teaspoon) or self-rising flour (1 teaspoon).

Heat a nonstick skillet over medium heat, add butter or oil, and pour the batter in rounds (make them any size you like; I used a heaping tablespoon for each and got 10 pancakes). Flip them when you see bubbles and the color changes.

Top with anything you like! For savory: cream cheese, avocado, tomato, oregano, olive oil, etc. For sweet: honey, fruit, whipped cream, etc.
