Do you have leftover rice and chicken from another meal? Here’s a delicious solution using just one pan! Wonderful, easy, and tasty!

First, wash, prep, chop, and gather all your ingredients.

If your chicken is already cooked, set it aside to add later. If it’s raw, season with salt and pepper, then place it in a wok or deep skillet with 1/2 cup water (about 120 ml). Cook until the water evaporates and the chicken is cooked through. Remove, let cool slightly, and cut into cubes.

Once the chicken is cooked, add a little oil to the wok. Add the onions and carrots and sauté for 2-3 minutes. Then add the garlic.

If using frozen peas, add them now along with 1/2 cup water (about 120 ml) and cook until the water is absorbed. If using canned peas, you can skip the water and move to the next step.

Once the liquid is absorbed, add the eggs and scramble them in the pan.

Now add the cubed chicken, stir, then add the rice and corn. Mix well.

Add a little more oil and soy sauce if desired. Stir well and serve hot! 🍚 Enjoy!
