Place a pot of water on the stove. Crack an egg into a small dish, keeping the yolk intact. When the water boils, lower the heat to a simmer, then reduce it further and add the vinegar when it stops boiling.

Stir the water with a spoon to create a small whirlpool and gently slide in the egg. Let it cook for 4-5 minutes, continuing to stir. Remove the egg with a slotted spoon and place it on a small dish. Repeat with the other egg.

Cook the spinach in a pan with some oil until done.

Place each egg on a slice of sandwich bread, drizzle with olive oil, and top with the spinach. Sprinkle with sesame seeds and pepper, and serve.
