Slice the bread into pieces about the thickness of a finger. Toast on a griddle or pan until the bread is golden brown.

Add olive oil, slice the tomato thinly, clean and slice the avocado thinly. Sauté the cherry tomatoes in oil for a minute and cut them in half. Add the salmon, avocado, and cherry tomatoes, sprinkle with sunflower seeds, and it's ready. Enjoy a good light lunch.
