To make the Pad Thai sauce: Place a pot over medium heat. Add water, tamarind paste, granulated sugar, palm sugar, and salt. Bring to a boil, then taste and adjust seasoning as desired. Let cool and store in the refrigerator.

Prepare all ingredients and the beef. Heat a wok or large skillet over medium heat, add vegetable oil, then add shallots, fried tofu, and sweet pickled radish.

Add the beef and Pad Thai sauce.

Add the soaked noodles and stir-fry until well combined.

Add the egg and stir until everything is mixed together.

Taste and adjust seasoning as desired. Serve on a plate and garnish as you like.
