Ingredients

Serves 1 serving
  1. 3.5 ozbeef (sliced) (about 100 grams)
  2. 5.3 ozPad Thai rice noodles, soaked until soft (about 150 grams)
  3. 1.8 ozfirm tofu, cut into cubes (about 50 grams)
  4. 1 teaspoonfinely chopped pickled radish
  5. 1.8 ozraw bean sprouts (about 50 grams)
  6. 2 stalksgarlic chives, cut into 2-inch pieces
  7. 1large egg
  8. 1/2 tablespoonvegetable oil (for stir-frying)
  9. 1/2 tablespoonroasted peanuts, crushed
  10. 5.6 ozfresh vegetables for serving (about 158 grams)
  11. 1/2 teaspoonchili powder (or to taste)
  12. = Pad Thai Sauce Ingredients =
  13. 2 cupswater (about 500 grams)
  14. 1 1/2 cupspalm sugar (about 300 grams)
  15. 1/3 cuptamarind paste (about 100 grams)
  16. 1 cupgranulated sugar (about 200 grams)
  17. 1/2 tablespoonsalt

  1. 1

    To make the Pad Thai sauce: Place a pot over medium heat. Add water, tamarind paste, granulated sugar, palm sugar, and salt. Bring to a boil, then taste and adjust seasoning as desired. Let cool and store in the refrigerator.

    Prepare all ingredients and the beef. Heat a wok or large skillet over medium heat, add vegetable oil, then add shallots, fried tofu, and sweet pickled radish.

    Add the beef and Pad Thai sauce.

    Add the soaked noodles and stir-fry until well combined.

    Add the egg and stir until everything is mixed together.

    Taste and adjust seasoning as desired. Serve on a plate and garnish as you like.
