Sweet Potato Peanut Bisque

This was one of those dishes that when I tried it, I couldn't believe I actually made it.. The sweet potato, tomato juice, and peanut butter makes such a great flavor, and I personally love the spice kick to it. This is a hearty meal in itself or goes great with a salad.

Cooking Instructions
- 1
Prick sweet potatoes in several places with a fork. Microwave on High until just cooked through, 7 to 10 minutes. Set aside to cool. When cooled, peel, and cut into bite sized pieces. To save time, you can also pick up sweet potatoes already peeled and cut into chunks at many local grocery stores.
- 2
Heat olive oil, add onion and cook, stirring, until it just begins to brown, 2 to 4 minutes. Add garlic and cook, stirring, for 1 more minute. Stir in green chilis, ginger, tomato juice, and allspice. Adjust the heat so the mixture boils gently; cook for 10 minutes.
- 3
Meanwhile, blend half of the sweet potato chunks, the peanut butter, and the vegetable broth in a food processor, or use a hand blender to puree those ingredients together.
- 4
Add the rest of the sweet potato chunks to the pot, cook another minute, and then add the puree mixture.
- 5
Let it gently simmer another few minutes so all the flavors blend together. If desired, I like to chop up some peanuts and/or cilantro to top it off!

Sweet Potato Mont Blanc Sweet Potato Mont Blanc
My parents sent me plenty of sweet potatoes so I decided to try and make an intricate cake. Quite a few sweet potatoes were used up just during the experimental phase. The softness of the cream is important. If it's too firm, it won't pipe out well. Even if you pipe it out very carefully, if the cream is thick and lumpy the finished product will look unattractive. If you don't have a blender you can strain the mixture with a fine-mesh sieve. If you want to bake it into one large cake, shaping it into a dome. For about 26 small cakes, or one large dome. Recipe by Iku.. cookpad.japan -
