    Prepare the Ingredients:Begin by measuring and preparing all the ingredients. Chop the nuts and set them aside.

    Heat Ghee:In a heavy-bottomed pan or kadai, heat the ghee over medium-low heat. Allow it to melt completely.

  3. 3

    Add Besan:Once the ghee is melted, add the besan to it.

  4. 4

    Roast Besan:Stir continuously and roast the besan on low-medium heat. This is the most crucial step and will take around 10-15 minutes. The besan should turn golden brown and emit a nutty aroma. Be patient and keep stirring to avoid burning.

    Dissolve Sugar:In a separate saucepan, heat 2 cups of water and add the sugar to it. Stir until the sugar dissolves completely. You can also add saffron strands for flavor and color at this stage.

    Combine Sugar Syrup and Besan:Once the besan is nicely roasted, carefully pour the hot sugar syrup into the besan mixture. Be cautious, as it may splutter.

    Cook Halwa:Continue to stir the mixture to avoid lumps. The halwa will start thickening. Add cardamom powder and food color (if using). Keep stirring until it reaches the desired consistency. It should leave the sides of the pan and form a smooth, glossy texture. This should take around 5-10 minutes.

    Add Chopped Nuts:Add the chopped nuts and mix them into the halwa. Reserve a few for garnishing.

  9. 9

    Garnish and Serve:Finally, garnish the Besan Ka Halwa with a tablespoon or two of ghee and the reserved chopped nuts. Give it a quick stir.

  10. 10

    Serve Warm:Serve the Besan Ka Halwa warm. It's best enjoyed fresh!
