This is an AMAZING simple soup, Healty and great for lunch on as Part of a Thai meal - easy to make ahead and reheat

Cut The end off the groud and then into 4 pieces and hollow out the centre. In the Kitchen sink or large bowl sprinkle with salt - leave for a few minutes then wash with alot of water. Soak the Glass Noodle in Warm Water at the same time.

In a peastle add the Garlic, Coriander Root and pound togehter to make a paste then add the pepper corns and pound again. Then the Fish, Oyster sauce and Soy to make a paste.

In a large bowl or pan add the pork and paste and mix well together the chop the drained glass noodles into this (about 4cm long pieces) and mix well.

Stuff the pork mixture into the gourd. Then heat the stock in large pan until simmering and carfully add the gourds and add the carrots and mushrooms. cook for 40 mins then allow to cool. I reheat the soup and allow to cool 2 more times this really enhances the flavour and makes the soup and gourd taste amazing - add the sugar if you dont want too bitter.

You can cool and then put into the fridge for upto 2 days then reheat and serve with Rice or just have for an amazing lunch - WOW !
