Ingredients

Prep time: 10 min / Cook time: 20 min
Serves 4 servings
  1. 4boneless, skinless chicken breasts (preferably free-range)
  2. 4 slicesbacon
  3. 1 pieceComté cheese, about 3 1/2 to 5 1/4 oz (100 to 150 grams)
  4. About 8 tablespoons fine breadcrumbs
  5. About 8 tablespoons all-purpose flour
  6. 2eggs
  7. Grapeseed oil or another neutral oil
  8. Salt, pepper
  9. Herbes de Provence (optional)

Prep time: 10 min / Cook time: 20 min
  1. 1

    Slice the chicken breasts in half lengthwise to open them up.

    Place them between 2 sheets of parchment paper. Use a rolling pin to pound and flatten them. Season both sides with salt and pepper.

    On one half of each flattened chicken breast, place a slice of bacon and a few thin slices of Comté cheese, cut with a small knife or cheese wire.

    Fold the chicken over to wrap the cheese and bacon completely. If needed, secure with a toothpick.

    Set up three shallow bowls: put the flour in the first, the eggs beaten with a fork in the second, and the breadcrumbs in the third. For extra flavor, add Herbes de Provence and a little salt to the breadcrumbs and mix.

    Using a fork and a tablespoon, dip each cordon bleu first in the flour (tap off any excess), then in the beaten eggs, and finally in the breadcrumbs. Make sure each piece is well coated at every step.

    Heat the oil in a skillet. Brown the cordon bleus for about 5 minutes on each side. Then reduce the heat and cook for another 5 minutes on each side to finish cooking the chicken. You can cover the skillet to speed up cooking. Serve immediately, removing any toothpicks first.

    Serve these cordon bleus with a mesclun salad or rice.
