Pound the pork lightly with the back of a knife.

Heat the oil in a frying pan and cook the pork on both sides until golden brown.

Transfer the pork into a saucepan with 3 cups of water (600 ml). Bring it to a boil over high heat. Add sake, garlic, ginger, and red chili pepper. Cover with a lid and simmer for 1 hour.

Add 4 tablespoons of soy sauce and cover with the lid again. Simmer for 20 minutes over low heat. Then add 2 tablespoons of soy sauce and 4 tablespoons of sugar. Simmer for another 20 minutes.

Remove the pork. Dissolve 1 tablespoon of katakuriko in 1/2 tablespoon of water. Pour into the sauce to thicken.

Put the cooked rice in a serving bowl and place the pork on top. Pour the thickened sauce over the top and serve.
