Ingredients

15-30 min. (depending on method)
4-5 servings
  1. 1/2 cwater
  2. 5-6potatoes, cut into wedges or cubes
  3. 2 Tolive oil
  4. 1 Toregano
  5. 4 clovesgarlic, minced
  6. juice of lemon (approx 1/8 c)
  7. 2 tkosher salt
  8. 1 tblack pepper
  9. 1/4 cfeta cheese

Cooking Instructions

15-30 min. (depending on method)

    For foodie: Pour water into the pot. Place potatoes in crisp basket. Pressure cook on low for 3 minutes.
    In oven: omit water, spread on baking sheet, drizzle olive oil, sprinkle with salt and pepper. bake 400 for 35 minutes or until tender crisp.

    While potatoes are cooking, stir together 1T olive oil, oregano, garlic, lemon juice, feta, salt and pepper in small bowl. set aside.

    If using foodie: after pressure cooking, pour 1T olive oil over potatoes and shake to coat. close crisping lid, select air crisp, temp 400F for approx 15 minutes.

    When cooking is complete (either method) put potatoes in large bowl, toss with oregano dressing and eat. yumm!!
