This is a variation of Waka's salt chanko nabe.

Slice the onions into half-moon slices about 3/4 inch (2 cm) thick. Cut the other ingredients into bite-sized pieces. For the meatballs, mix all the meatball ingredients together well until sticky.

Pour the water into a pot and heat. Just before boiling, add the chicken bouillon and other broth ingredients. Turn off the heat and add only the sliced onions to bring out their sweetness.

After a short while, turn the heat back on. Use a spoon to drop in the meatball mixture, then add the chicken thigh, pork belly, and shiitake mushrooms. Skim off any foam as needed and simmer for a while.

Add the remaining vegetables in order of how long they take to cook. When everything is cooked through, it's ready! Finish with ramen noodles if you like!
