Heat oil in a skillet over medium heat. Add the onion and cook until translucent, then add the tomatoes and sauté until softened.

Add the chicken, then season with garlic salt, black pepper, and ground chipotle chili. Mix well and let it cook to blend the flavors.

You can use either cooked or rotisserie chicken for this recipe.
