Easy Namul with Dried Soybean Sprouts and Dried Edamame

I tried making namul using dried soybean sprouts and dried edamame. The flavors soak in well and the texture is great! Perfect as a snack with drinks or as a side with rice.

Ingredients

Serves 2 servings
  1. 1 bagdried soybean sprouts
  2. 0.7 oz (20 g)semi-dried edamame
  3. Seasonings
  4. 2 tablespoonstoasted sesame oil (about 30 ml)
  5. 1 tablespoonlight soy sauce (about 15 ml)
  6. 1 teaspoondoubanjiang or gochujang (about 5 ml)
  7. 1 clovegrated garlic
  8. 1 tablespoontoasted white sesame seeds (about 8 g)
  9. 1dried red chili pepper, sliced into rings

Steps

    For dried soybean sprouts:
    Food dehydrator settings:
    Temperature: 155°F (68°C)
    Timer: 3-6 hours (until fully dried)

    For dried edamame:
    Food dehydrator settings:
    Temperature: 155°F (68°C)
    Timer: 3 hours (semi-dried)

    Prepare the dried soybean sprouts and dried edamame.

    Soak the dried soybean sprouts in water for 30 minutes to 1 hour to rehydrate.

    Soak the dried edamame in water for 30 minutes to 1 hour to rehydrate. (The edamame should be boiled before drying.)

    In a bowl, combine the sesame oil, light soy sauce, doubanjiang or gochujang, grated garlic, toasted sesame seeds, and sliced chili pepper.

    Bring a pot of water to a boil and cook the rehydrated soybean sprouts for 1-2 minutes.

    Drain the soybean sprouts and edamame, then add them to the bowl with the seasonings.

    Mix everything together. That's it!
