Refreshing Cabbage and Pork Shabu Salad

Quickly blanch both the cabbage and pork! This dish lets you enjoy lots of cabbage. You'll be surprised by how delicious it is!
Recipe background:
I usually make this with lemon juice, but this time I tried using a mild vinegar instead. My family noticed it was a little different from usual, but said, “This is delicious too!” The flavorful vinegar seemed to make it even tastier.

Ingredients

Serves 2–3 servings
  1. 2–3 large cabbage leaves
  2. 3.5 ozor more thinly sliced pork (100 g or more)
  3. 2–2.5 inches green onion (5–6 cm)
  4. 1 tsptoasted sesame oil (for seasoning)
  5. 1/3 tspsalt (for seasoning)
  6. 1 tbspsoy sauce
  7. 1 tspsugar
  8. 2 tbspmild vinegar (such as rice vinegar)
  9. 2 tsptoasted sesame oil
  10. 1 tspfinely minced ginger

Steps

  1. 1

    Thinly slice the cabbage. Cut the pork into bite-sized pieces. Slice the green onion diagonally, then cut into thin strips. Make the strips as fine as possible.

  2. 2

    Bring a pot of water to a boil. Add the cabbage and blanch until it turns bright green. Remove, then toss with the salt and sesame oil (for seasoning) to add flavor.

  3. 3

    In the same pot of water (add a little cold water to lower the temperature), blanch the pork slices. While the pork is still hot, mix it with the green onion.

  4. 4

    Combine all the sauce ingredients (soy sauce, sugar, vinegar, sesame oil, and minced ginger) and mix well. Pour the sauce over the cabbage and pork mixture, then toss everything together.
