Easy Ponzu Hijiki, Edamame, Tuna, and Spinach Salad

Packed with nutrients and made with tuna, kids will love this dish! The only seasoning you need is ponzu, so it's super easy. It's also great for lunchboxes.

I wanted to add something green to a lunchbox, so I made this dish with what I had at home. I thought about different seasonings, but just adding ponzu made it perfect. My kids loved it. Tuna really is amazing!
Easy Ponzu Hijiki, Edamame, Tuna, and Spinach Salad

Cooking Instructions

Soak the hijiki in water to rehydrate. Boil or microwave the spinach, then cut it into bite-sized pieces. Drain the tuna and edamame.

Combine all the ingredients in a bowl and mix well. That's it—ready to serve!

This is also great for lunchboxes.

I also added broccoli. Feel free to add your favorite vegetables!
