Mouko Tanmen Nakamoto-Style Mapo Tofu

This is a Mouko Tanmen Nakamoto-inspired mapo tofu! Spicy and flavorful, just like at the restaurant, but you can make it at home. Unlike basic mapo tofu, this version is quite different and brings that signature Mouko Tanmen Nakamoto taste. Even without tanmen noodles, it's great served over white rice or enjoyed on its own, so I wrote up this recipe for easy home cooking.
Mouko Tanmen Nakamoto-Style Mapo Tofu
This is a Mouko Tanmen Nakamoto-inspired mapo tofu! Spicy and flavorful, just like at the restaurant, but you can make it at home. Unlike basic mapo tofu, this version is quite different and brings that signature Mouko Tanmen Nakamoto taste. Even without tanmen noodles, it's great served over white rice or enjoyed on its own, so I wrote up this recipe for easy home cooking.

Bring the water and sake to a boil, then add the miso and stir until fully dissolved.

Add the chicken bouillon powder (or Chinese soup base), soy sauce, sesame oil, and garlic. Simmer over medium heat.

Add the ground red chili pepper. Don’t worry if it seems like a lot—this is what gives it the signature heat!

Add the cubed tofu. Gently stir to heat the tofu through without breaking it up too much.

Turn off the heat, then add the cornstarch slurry to thicken. Stir well and be careful not to let it burn.

Finish over medium-high to high heat. Once the sauce thickens, it’s ready! Serve in a bowl and enjoy.
