Grande Zuppa di Formaggio Italiano
I'm having a dental emergency and I wanted something that won't compromise my aching tooth... and well, a nice meal for my 14 mo old baby, too. So I decided I make this
Steps
- 1
Boil the carrots and the brocolli for 7 minutes. When it comes to boil put it on medium heat and cover. After 7 minutes let it sit on medium low heat for 3 minutes more.
- 2
Blend the chicken stock, milk, onions, and garlic
- 3
When vegetables are done boiling, drain and rinse them in cold water
- 4
Blend vegetables along with the chicken stock, onion and garlic. Blend well until puree.
- 5
Put them in the pot and heat for 3 minutes under low heat. (You can start at high heat to warm it faster, but switch to medium low as it starts to boil)
- 6
When soup starts boiling, add the Swiss cheese while thoroughly mixing. Mix well under medium heat for 3 - 4 minutes or until you know the cheese has been melted completely or mixed well to your desire
- 7
Add the thyme, Basil, oregano, marjoram, sage, rosemary, and salt while mixing subtly. Mix for 2 - 3 minutes.
- 8
Top with shredded parmesan, then serve and enjoy
