Ingredients

Serves 2 servings
  1. 2 bundlessoba noodles
  2. 1 2/3 cupsmentsuyu (about 400 ml)
  3. 1/2 teaspoontoasted sesame oil
  4. 1/4 teaspoongrated garlic
  5. 1 dashchili oil (ra-yu)
  6. 2 inchesgreen onion, finely chopped
  7. Optional: shredded nori (seaweed), grated yam (tororo), etc

Steps

    Bring plenty of water to a boil and cook the soba noodles.

  2. 2

    Prepare the mentsuyu. If using a concentrated type, dilute with water to make 1 2/3 cups (400 ml).

  3. 3

    Add all the ★ ingredients to the mentsuyu and mix well. This is your special dipping sauce!

  4. 4

    Rinse the cooked soba noodles under cold water, then enjoy with the dipping sauce. Top with nori or grated yam if you like!
