Buckwheat gives this meatloaf its delicious flavor, spelt flour its crunch, and these two take away the liver taste and feel, so you end up with four pounds of meatloaf that everybody loves. Freezes well. Serve with fried rice.

Ingredients

3 hour simmer, 15 minute cook
2 people, 16 dinners
  • 1/2 Tspeach, ground fine, all spice, turmeric, nutmeg, coriander, cinnamon, cloves, pepper, mace, ginger, anise, cardamon, galangal, licorice wood shavings, fennel
  • 2 Tbssweet paprika powder
  • 6 Tspflaked seasalt
  • 1 poundbuckwheat flour
  • 1 poundspelt wheat flour
    California Farm Dark Rye Bread
  • 1 poundfresh pork belly
  • 1 poundpork liver
  • Equipment: large soup pan with lid, wooden spoon, food processor, 2 bread forms
  • Cost: pork $8, flour $1.60, spices 40 cents, 63 cents per dinner

Steps

3 hour simmer, 15 minute cook
  1. 1

    Cover the pork belly and pork liver with water, add seasalt, bring to boil, simmer till soft. Cool, chop pork belly, puree pork liver in food processor, mix well.

    Add chopped and pureed meats back to broth in pan, add spices, half pound buckwheat flour and half pound wheat flour to pan, heat while stiring till consistency of thick batter, add buckwheat flour and wheat flour, keep stirring and heating till the consistency of thick mashed potatoes.

    Flour dust breadforms, fill with two pound meatloaf each, cool in fridge till solid. Slice in eight slices when solid, 1/4 pound each, dust with buckwheat flour, wrap each slice individually in parchment paper, freeze. Thaw meatloaf, heat skillet, melt lard in it to fry.

    When the meatloaf develops a nice brown crust, serve with fried rice. Enjoy.

I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
